There is one item that cannot be left out on the menu at family dinners and that is my mom's stuffed mushrooms. There are many stuffed mushroom recipes out there, but none that live up to this one in my book. These mushrooms are creamy with a bit of a smokey taste, and are absolutely delicious! Plus they are very simple and easy to make.
Ingredients:
1-2 packages of white button mushrooms, stems removed**
8 oz (1 block) cream cheese
1 small onion, diced (You can substitute chives instead if you wish)
2 teaspoons Worcestershire sauce
1 lb bacon, fried and chopped into small pieces (you can also use the already cooked bacon or bacon bits to make things easier)
**We reserve the stems and dip them in ranch dressing as a yummy appetizer.
Directions:
Preheat oven to 350 degrees. Mix cream cheese, onion, 2 tsp Worcestershire sauce, and bacon. Fill the mushroom tops with cream cheese mixture. Bake, cream cheese facing up, on a cookie sheet, for approximately 30 minutes or until browned.
Serve warm or cold, both are delicious! We actually like them refrigerated more than we do warm, but it's completely up to you.
