Who doesn't love going to the fair and eating a yummy funnel cake? They are so delicious, yet so expensive! The food vendors really do have it made when it comes to this tasty treat. People are willing to pay $4, $5, I've even seen them selling for $10 before, but why break the bank to enjoy this treat when you could make it yourself for much, much cheaper.
Ingredients:
1/2 cup flour
1/4 cup sugar (white sugar)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (table salt)
2 eggs
1 cup milk
1 teaspoon vanilla
Powdered Sugar for sprinkling
*Any other toppings you desire, I enjoy strawberries on mine!
Vegetable oil for frying (You can also use canola oil or olive oil but I find that plain old veggie oil is best.)
Directions:
Mix flour, sugar, baking powder, baking soda, and salt in medium bowl. Beat eggs, milk, and vanilla in a large bowl. Add flour mixture.
Heat oil. It is important to make sure the oil is hot before attempting to fry your funnel cake. You can test the heat of your oil using a candy thermometer, your oil should be heated to 375 degrees. You can also drop a little dough into the oil. If the dough begins to float and fry the oil is ready; however if it sinks the oil is not hot enough. Be sure not to make your oil too hot as this will only burn your cake, while too cool will cause your cake to soak up too much oil.
Slowly pour 1/2 cup batter into hot oil, pour in a circular pattern overlapping dough in a lattice pattern. Fry 30 seconds on each side or until golden brown on each side. Remove funnel cake and drain on paper towels.
Sprinkle with powdered sugar and add other toppings if you desire, enjoy!
